I've actually seen quite a few Ghibli films, as they're kind of the "entry level" to anime films thing. I thought Grave of the Fireflies was good, but I didn't get the "IT WILL EAT AWAY AT YOUR VERY SOUL" reaction a lot of people seemed to have.
I thought The Wind Rises, Princess Mononoke and Spirited Away were all excellent, Howl's Moving Castle and Ponyo were very good, Castle in the Sky was average, and My Neighbor Totoro was below average.
I liked Akira, just to mention another of the really obvious ones.

Also Mink, I agree with the general reaction to Grave of the Fireflies, so many people made it sound like I should be balling at the end, but I didn't shed a tear, though the ending did leave me a bit down for the rest of the night.
Also, it's mostly nostalgia, but I loved Castle in the Sky, just a great movie when I was a kid and one of the many reasons I came back to Ghibli when I grew up.

7. Uchouten Kazoku This anime is a slice of life, and it has a beautifully constructed world, where humans, tanuki, and tengu's live in. The tanuki race is able to transform into any object or species they desire, while the tengu's look like ordinary humans, but able to fly. It's a weird concept. The main character decides to live his life extraordinary after his father died.
8. Kokorro Connect A group of students who couldn't decide which after school group to join, created a newspaper club, filling the paper with random articles. (One is obsessed with wrestling, just saying.) All is well, until some unknown omniscient jackass decides to "mess" with their lives by doing unnatural things, like switching bodies at random.
